Overnight Oats

Returning home, particularly after a work trip, refuels my commitment to eating healthy.  Eating on the road is tricky, and often times makes me feel terrible. The best way to get on track it starting the day with my favorite chilled overnight oats recipe.  

I make mine in an individual size portion, ready to travel to work in the morning, but this could easily be doubled and made in larger batches.  The toppings change based on seasonal availability and my mood, with equally delicious results.

Overnight Oats Recipe:
Combine the following ingredients in desired container and let sit in the refrigerator over night:
1/8 cup steel cut oats
1/8 cup old fashioned oats
1/4 cup ezekiel cereal
small handful of dried cherries
1 tablespoon of chia seeds
a few dashes of cinnamon
1/2 cup of almond milk
top with favorite fruit, approx. 3/4 cup {fresh berries are delicious, but I have also used frozen fruit and by the morning it has softened perfectly}

*cooks note- while this is outstanding as a chilled dish, just pop in the microwave for a minute if you prefer it warmed which is great too!
