Meatless Monday: Italian Style

Trying to figure out what to do with all of our greens, I recently taste-tested a version of this recipe. The primary ingredient, orecchiette, sparked my interest (it's got to be my favorite pasta because it is as delicious to pronounce as it is to consume). Cooks note- substitute liberally; we used spaghetti and feta with plate-clearing results.
