Skinny Fruit Tarts

This weekend, I served a spa-inspired menu at my girls day in with Arbonne.  Facials and foot soaking was accompanied by a few healthy nibbles {and some wine}.  The skinny fruit tarts were as pretty as they were delicious.
Skinny Fruit Tart Recipe:
{adapted from Simply Baking}

1/2 stick of melted butter
1 package of phyllo dough
2 cups of Fage Greek Yogurt
2 tablespoons of honey
Seeds of 1 vanilla bean or 1 teaspoon of vanilla extract
fresh fruit of your choice

Directions:
1) Preheat oven to 350 degrees and greece muffin tins {I made 36}
2) Cut phyllo dough into squares that will hang a little over the edges of the muffin tins.  Layer squares, brushing melted butter on each, until you create a nest-like cup in the muffin tin
3) Bake approximately 5 minutes until they start to crisp up and look golden brown
4) Mix yogurt, honey and vanilla and then put a dollop into each cooled phyllo cup
5) Top with your favorite fruit

*Cooks note, next time I would have added a garnish of mint of something green, like mint. You could also thin some jam and drizzle over the top to make these a bit more dressy
