In need of a break from holiday eating, I sought refuge in a catch all salad packed with nutrients. Quinoa is new to me, a welcome cousin to couscous, that I'm sure to use a lot in the future. This is one of those recipes that you can throw together for a satisfying and feel-good-about-eating-it dinner.
