Meatless Monday: White-Bean-Stuffed Portobellos

Hope you all had a wonderful weekend! I tried a new meatless recipe that I'm eager to share. This is before pic {I forgot to take an after} but hopefully it will give you the idea... IMG_4785
Oven roasted portobellos are topped with thyme spiked cannellini beans and topped with bread crumbs and feta cheese. For the complete recipe, adapted from Everyday Food, check out this link.
