
Curried Quinoa with Chicken and Peas
1 T of Olive Oil
1 chicken breast cut into pieces (more if you like)
1 small red onion in a rough chop
1 clove of garlic, crushed and diced
1 15oz can of petite dice tomatoes (I used no salt added kind)
1 T of curry powder
1/2 T of chili powder
1/2 T of nutmeg
2 cups of chicken broth
1 cup of quinoa
12 oz bag of frozen peas
S&P to taste
Directions:
1) Saute chicken, onion and garlic in dutch oven for about 10 minutes or until the chicken pieces are almost cooked
2) Add the tomatoes (undrained) and spices and stir to combine, cook for another 5 minutes
3) Add water and bring to a boil and then stir in the quinoa.
4) Reduce heat to simmer, cover and let cook for 20 minutes
5) With about 5 minutes left, stir in peas and once warmed through serve!

I have been on a real quinoa quick lately. I made a great black bean one yesterday. Yours sounds great with the curry!
This sounds great because I love all the components separately ~ quinoa, peas, and curry! Putting them together, I should have thought of that sooner!
