Homemade Ginger ale

Most evenings lately, you'll find me in the backyard snipping away at my heartily-growing pot of mint. It's a lovely ritual I've grown to look forward to. The drink that swiftly ensues that is worthy of sharing with you all in hopes that you'll slow down and enjoy one too.

Simply-put, this drink is summertime in a glass.  And with the season unofficially kicking off on Memorial Day this weekend, there is no better time to get some homemade ginger ale cooking in your kitchen.

Refreshing as is, your favorite libation is a welcome accompaniment.  

Homemade Ginger Ale
{adapted from Simply So Good}


Ingredients: 
2 cups peeled and chopped fresh ginger
2 cups water
1 1/2 cups sugar
1 large bottle of sparkling water {I use my soda stream for this}
fresh limes 
fresh mint leaves {I have also been adding some lemon balm to mine}

To make the Ginger syrup:  In a medium size sauce pan, heat the water and ginger until it reaches a low simmer.  Simmer for five minutes.  Remove from the heat and cover.  Let stand for 1 hour.  

After one hour, drain the juices through a fine mesh strainer.  Discard the ginger pieces.  Let cool then place in a jar and refrigerate.

To make the Ginger Ale:  In a tall glass, add 1 part lime juice (about 1/2 lime per glass), 2 parts ginger syrup, and 3 parts sparkling water.  Stir to combine the liquids.  Fill glass with ice.  If desired, add fresh mint.

Adjust to your liking.  I always end up adding more lime juice
