Meatless Monday: Spiced Pumpkin and Yoghurt Pasta

I can't believe that I've been doing meatless monday posts for over a year! {If you want to check out all the archives, click here} And since I've been asked a couple times recently why I blog about meatless meals, although I'm not a vegetarian, please click here to learn about the movement and why I believe in it.

I've learned so much in the last year by going meatless once a week. I've enjoyed it so much that I go meatless more often than not these days because I've found a plethora of dishes that are healthy, taste great and make me feel good about what I'm putting into my body.

Today, I'm about to go out on a limb and share with you my absolute favorite meatless dish I've made so far. Spiced Pumpkin and Yoghurt Pasta is ridiculously delicious, feeds a crowd and received a great review from even my father-in-law who is about as far from being vegetarian as they come.

That sounds delish! Tonight I'm making Jamie Oliver's pasta with basil and tomatoes. Easily, the simplest dish I've ever made. I need something easy tonight!!

Love going meatless once a week! Try some lentil soup in the crock-pot with veggie broth. Add some carrots, onions, your fave spices and set for about 6 hours...add a great grilled cheese and dinner is ready!! ENJOY:)
