Charlotte CSA

In an effort to support local farmers, boost creativity in the kitchen and to eat healthy we joined a local CSA for the spring/summer season. And while we're excited to receive a box of freshly picked organic produce once a week, I think I may have underestimated what a challenge it would be!
This is our first week and look at our kitchen counters... we received enough greens to last a lifetime (or supposedly one week!), radishes, incredible strawberries and some herbs. Luckily, Charlotte's warm weather will be providing a more diverse crop in the coming weeks but until then I'm up to my ears in lettuce.

This week, I utilized one of my favorite sites and tried a quick and easy garlicy greens recipe- so good!

PS- For Charlotte readers, be sure to check out Poplar Ridge Farms if you want to get in on the action. They host market days, have beautiful flowers and even host farm-to-fork dinners (I'm dying to try).
