As we welcome the first Monday of October, I’d like to introduce a new feature for the month called Meatless Mondays. My friend, Patty, had a great idea to feature meat-free meal ideas in collaboration with the notable campaign each week and I’m excited to join the cause.
Although I’m not a vegetarian, I love what this campaign supports. In the past, when we have experimented with non-meat based meals, we have found some of our favorite new recipes and ideas. Going meatless just once a week (it doesn’t have to be Monday) is a very easy way to improve your health and support the health of the environment.

I think it's a good idea. MDH and I really only eat meat 2 or so times a week, and no more than three. We try to focus on salads.

such a good idea. I wonder if I could get hubby on board? when he travels the kiddos and I eat mostly meatless and I love it or maybe it's me just being lazy.
For the last month my boyfriend and I have been eating meatless EXCEPT one day a week. I have a meat day, instead of a meatless one. :P
This is an awesome idea! Admittedly, I am not a vegetable person, but I do love rice, beans, and pasta. Carb-licious will do the trick.
I'm so trying to do a diet overhaul for the hubs and I right now. We feed the dude much healthier things than we put in our own bodies.
